Food Borne Illness' at Hot Peppers

Introduction

Task:

You are the restaurant manager for a local restaurant called Hot Peppers. There has been a recent outbreak of food borne illness linked to your restraunt and business is on the line. These outbreaks have included multiple pathogens and have been the result of multiple mistakes. As the owner it is time to do something about this issue, you need to ensure the safety of your customers is top priority through retraining all of your staff.

In teams, you will be assigned one of thirteen major food borne illnesses that are a threat to the public. Your task is to learn about your specific illness from the websites provided and create an informative presentation for the employees of your restaurant. This presentation may take any of the following formats:

Your presentation must include the following:

  • Name of the foodbourne illness and what is considered a foodbourne illness outbreak?
  • What are the sources of your fbi and how it is contracted
  • Symptoms, incubation period, how long it lasts (your fbi)
  • Ways to prevent it (your fbi)
  • Treatment and any possible long term effects (your fbi)
  • Provide one real life example of what has happened in the past when the public or other restaurants had a similar outbreak of your assigned illness. You must provide the following information on this case study: who was responsible for the outbreak, what happened to the people affected, where did this take place, when did this happen and why did the outbreak occur. This needs to be a case that has occurred within the last 2 years. (your fbi)

Process:

  1. Obtain your assigned pathogen from the teacher
  2. Divide up your research so that each group member has equal research and jobs to do:

             

  • Name of the foodbourne illness
  • What are the sources 
  • How it is contracted (i.e. how do people get it, can it be spread?, etc.)
  • Symptoms and Incubation Period   
  • How long it lasts 
  • Treatment and any possible long term effects
  • Provide one real life example of what has happened in the past when the public or other restaurants had a similar outbreak of your assigned illness. 3. Go to the recommended websites. There is more information than you will need, so you must read carefully to find the important facts. The third recommended website has a "case in point", or real life scenario. Include that in your presentation.

4. Use the information to design and create your product (Prezi, website, animoto, etc.)

5. Product should be eye-catching, neat, and colorful since they will be viewed by all employees of the restaurant.

6. Everyone in the group must participate in the process, as well as the presentation.

 Presentation:

  • Present your food borne illness informational “product” (i.e. prezi, animoto, etc)  to your "employees".
  • Present in an engaging matter so your employees are not falling asleep

First of all, give yourself and your group members a HUGE pat on the back for all of your hard work!
Your restaurant is now much more prepared to meet the challenges of preventing food borne illness. Community members have gotten word of your efforts to educate and train your employees and are showing their appreciation by coming to your restaurant in droves. The local paper has contacted you and would like to run a story about what you are doing. This will be more much-needed publicity and business to add to your bottom line.


You are the first line of defense when it comes to preventing food borne illness, both in your restaurant and in your home. You now have the tools and the experience to make eating a more safe and enjoyable experience.
