The Mediterranean way of eating emphasizes seasonal, fresh produce, whole grains and lean proteins, encouraging people to reuse and repurpose ingredients. This WebQuest invites you to explore Zero Waste practices through food, creativity and sustainability.
Task
Through this WebQuest you will:
- explore how the practices and values of traditional Mediterranean cuisine minimize food waste,
- apply zero waste principles by creating a new Mediterranean recipe using common leftovers from your kitchen,
- create a piece of art from everyday food scraps.
- exhibit your recipe and artwork to raise awareness during the European Week for Waste Reduction (EWWR) 2024.
Process
Step 1: Historical Context of Food Reuse
Food waste is a significant global issue, with substantial environmental, economic and social impacts. In many traditional diets, including the Mediterranean diet, there are practices and values that naturally minimize food waste.
Zero food waste focuses on using every part of food to minimize waste and conserve resources. Food leftovers can be creatively repurposed into new dishes, reducing food waste and maximizing the value of ingredients. The Mediterranean diet, characterized by its emphasis on fresh, seasonal produce, whole grains and lean proteins, inherently supports sustainable and waste-reducing practices.
Review the following presentation on ''Zero Waste practices in the Mediterranean Cuisine'' to find out how the Mediterranean approach aligns with zero waste principles, particularly through the reuse of food scraps.
Answer to the question included: "How can reducing food waste in your own home benefit you personally and help the environment?"
Step 2: Create a Recipe with Leftovers
Now it is your turn to create a Mediterranean inspired recipe that incorporates common leftovers. This could be a dish that includes vegetables, grains, or proteins that might otherwise go to waste. Add your recipe to the e-CookBook including the following details:

Step 3: Create Art with Everyday Food Leftovers
Transform everyday food leftovers and expired food items into vibrant works of art, showcasing their potential beyond the kitchen. By using leftovers, beans, lentils and chickpeas in creative designs, this exhibition highlights the beauty and sustainability of repurposing food that might otherwise go to waste. Each piece celebrates the colors and textures, inspiring a new appreciation for reducing food waste through artistic expression.
Step 4: Exhibit your artwork

Through this WebQuest students will have explored how the Mediterranean Diet inspires sustainable food practices that help reduce waste. By reusing leftovers in recipes and transforming them into art, they will have not only saved resources but also showcased creativity and responsibility. In addition, they will have created an e-CookBook that demonstrates how everyday leftovers can be transformed into delicious Mediterranean-inspired dishes.
