THE MATERIALS USED IN THE SERVICE (Plates)

Introduction

Elaboration of evaluation grids

This webquest is designed to teach students about the plates used in the service. The students will be specialized on the plates that they will do the implementations in their food and beverage managements in the sector.

Introduction

Plate is a broad, concave, but mainly flat vessel on which food can be served. A plate can also be used for ceremonial or decorative purposes.  Middle English (denoting a flat, thin sheet, usually of metal): from Old French, from medieval Latin plata ‘plate armour’, based on Greek platus ‘flat’. plate (sense 1 of the noun) represents Old French plat ‘platter, large dish’, also ‘dish of meat’, noun use of Old French plat ‘flat’. The plates are made of Porcelein that is very tough and high quality. They are durable, healthy and used for a long time. It is possible to see different types (rectangular, Square, oval, triangle etc.) the sizes of the plates also differ from the past cause of the developing food and beverage managements sector. The plates used in the food and beverage managements sector are grouped in three according to the size and shape;

*Flat plates

*Asiette creuse (Hollow Plate)

*Oval Plate

*In this webquest we will learn about:

-          understanding the meaning of plate

-          different types of plates

-          different size of plates

-          the usage of the plates

-          how to serve the plates

-          what is it made of

Ø  what are related to the quality of plates, ingredients, types of international plates, tips for using them.

Ø  Assessment techniques: observation, implementing, group work, investigation and internet will be used.

Ø  how to develop a questionnaire for the evaluation of different kinds of plates.

Task

Your task for this webquest is to find out plate types and learn the details related to the size, shape and quality.

You and your group (5 students total) will become "experts" on this topic.

Lastly, you will develop a procedure in which you will present all the progress that must be carried out within the departments: on the occasion of the serving them. You will also develop a questionnaire that will help you assess the shape, size and the quality of the plates.

Process

Follow the steps below for the first process in your project.

1. In groups of 3, you will work together to learn about how to learn about different types of plates by using the link and filling out the worksheet below.

Types of plates

Measuring types of plates (worksheet)

2. Each group will continue to search for preparing 3 different plates and completing the worksheet.

Now that you have completed all the components of process one, proceed to process two!

Great work!

Now you will develop a procedure in which you will present various kinds of plates respecting the following structure:

Nr. Crt.

Plates

Activities

1.

Flat plates

-          ……………………….

-          ……………………….

-          ………………………

-          ……………………….

2.

-          ………………………

-          ………………………

3.

Oval plates

-          ………………………

Furthermore, you will design a questionnaire that will help you assess the quality and types, observing the following conditions:

- simple to fill in, clear

- short: 8 - 10 closed questions

- a short introduction which includes a presentation of the aim of the questionnaire and some words of different plates

Conclusion

Don’t forget!

Regardless of the methods chosen, any preparing and presenting plate types assessment should answer the following questions:

1-What is Plate and what is it used for?

2-What are the types plates?

3-What are the features of flat plate?

4-What are the features of hollow plate?

5-What are the features  oval plate?

6-What are the plates made of?
