Introduction
Chocolate is a popular treat eaten by people all over the world. Making chocolate is a very long and complicated process. The seeds of cacao beans have a very bitter taste and must be fermented to develop the flavour of chocolate. They are then dried, cleaned and roasted. The shell is then removed to produce cacao nibs which are then ground to cacao mass which is then heated into chocolate liquor. The liquor is then cooled and processed into cacao solids and cacao butter. Milk chocolate is a combination of cocoa solids, cocoa butter or added vegetable oils, sugar and milk powder or condensed milk.
