Introduction
You are the restaurant manager for a local restaurant called Thai Tanic. There has been a recent outbreak of food borne illness in your area. These outbreaks have been the result of poor food handling practices and the appearance of various microorganisms in the food supply. Your neighbors have been getting ill and even your grandmother has had food poisoning. As a result, your restaurant’s profitability is suffering since fewer people are willing to go out to eat due to their fears of getting sick. Your business was already struggling before this outbreak, and any more loss of profit could result in layoffs of wait staff or possibly closing the restaurant. Something must be done to ensure the safety of your customers….soon.
Task

In teams of three, you will be assigned one of seven major food borne illnesses that are a threat to the public. Your task is to learn about your specific illness from the websites provided and create an informative presentation for the employees of your restaurant. This presentation may take any of the following digital formats:
- Podcast using programs such as Audacity, which is a free, open source, cross-platform software for recording and editing sounds. It has a large range of keyboard shortcuts for creating and editing sounds.
- Webpage - WordPress, Weebly,
- Prezi - a presentation tool that can be used as an alternative to traditional slide making programs such as PowerPoint. Instead of slides, Prezi makes use of one large canvas that allows you to pan and zoom to various parts of the canvas and emphasize the ideas presented there.
- PowerPoint Presentation
- Animoto - Everything you need to turn ordinary photos and video clips into rich videos within minutes.
- Blabberize - a photo editing tool that creates talking animations from a photo or other image.
- Popplet - create graphic organizers, timelines, and many other forms of visual organization
- PowToon - Create animated videos or presentations of your topic
- Any additional method of presentation must be cleared with your teacher ahead of time
Your presentation must be able to be played for students without you getting in front of the class and must include the following:
- Name of the disease
- Picture of the bacteria
- What are the sources, how it is contracted
- The incubation period
- Symptoms & how it affects the body (short and long term)
- Ways to prevent it
- Treatment and any possible long term effects
- Provide one real life example of what has happened in the past when the public or other restaurants had a similar outbreak of your assigned illness. You must provide the following information on this case study: who, what, where, when and why.
Process
Process:
- Obtain your assigned bacteria from the teacher
- Divide up your research so that all three group members have a job to do:
a. Person 1
- Name of the disease
- What are the sources (i.e. where does it come from? Water? Animals? etc.)
- Provide one real-life example of what has happened in the past when the public or other restaurants had a similar outbreak of your assigned illness. You must provide the following information on this case study: who, what, where, when and why and it should be a case that has occurred within the last 5 years.
b. Person 2
- How it is contracted (i.e. how do people get it, can it be spread?, etc.)
- Symptoms & how it affects the body (only short term)
- Incubation Period (How long does it take from the time you come into contact with the virus for you to exhibit symptoms?)
c. Person 3
- Ways to prevent it
- Treatment options
- Any possible long-term effects/complications
3. Go to the recommended websites. There is more information than you will need, so you must read carefully to find the important facts. The second recommended website has a "case in point", or real-life scenario. Include a summary of that in your presentation.
4. Use the information to design and create your product (Prezi, website (Weebly), Animoto, PowerPoint, etc.)
5. The product should be eye-catching, neat, and colorful since they will be viewed by all employees of the restaurant.
6. Everyone in the group must participate in the process.

- Present to your "employees" your foodborne illness informational “product” (i.e. Prezi, Animoto, etc) in a digital format that can be viewed online.

The local paper has contacted you and would like to run a story about what you are doing. This will be more much-needed publicity and business to add to your bottom line.
You are the first line of defense when it comes to preventing food borne illness, both in your restaurant and in your home. You now have the tools and the experience to make eating a more safe and enjoyable experience
