Understanding

of the ingredients
Your menu items clearly illustrate a strong understanding of the nature and of the ingredients. Your menu items show some understanding of the ingredients but do not fit in with the existing menu. The menu items you created do not demonstrate a good understanding of the ingredients, do fit into the existing menu and do not taste good.
Essay Well written and clearly describing the thought processes behind the menu items you created. Includes description of why you chose to do make what you made, not particularly engaging and contains grammatical errors. Essay was not well written or thought out. Contains many grammatical errors and does not show a good understanding of the menu or the featured ingredients.
Presentation The presentation is beautiful and well thought out. The presentation is nice but has room for improvement. The presentation is not good at all.
Taste Nice balance of flavor that compliments and features the main ingredient. Good flavors, does not necessarily compliment or feature main ingredient. Not well prepared, burnt, tastes bad.
