Main Dough Technics - Desserts (Traditional Dessert Nevzine)

This sinful sweet coming from the town of Kayseri which Turkish president, native of that town, was happy to introduce Obama to during the visit of the American President to Turkey. You know how at the Spice Market they put ‘Obama approved’ on a pile of pistachio nuts? So there is an invisible sight like that over this sweet.

This recipe is reduced from the regular serving size: nevzine sweet is typically served during religious celebrations and festivals so the ‘regular’ serving is overkill for most households.

*70 gram butter cold, chopped into cubes or grated

*1⁄4 cup vegetable oil

*1⁄4 cup tahini paste

*1⁄4 cup whole milk

*2 cups wholewheat flour

*1⁄4 cup finely ground walnuts

*1⁄2 tsp baking soda

*1⁄2 tbsp lemon juice

*For syrup:

-1 cup water

-1 cup unrefined cane sugar

-walnut halves for decoration



Preheat the oven to 180C/356F.

Prepare syrup: Combine water and sugar in a medium sauce pan, bring to a boil and simmer for 5-7 minutes until the syrup just starts thickening. Turn off the heat and set aside to cool down.

Make dough: Sieve the flour into a mixing bowl. Add the butter, vegetable oil, tahini paste and milk and rub the wet ingredients into the flour to get the texture of a moist sand. Add ground walnuts, baking soda and lemon juice and mix well. Transfer to the baking sheet (8×8 inches square or round equivalent) and with an effort press the dough into an even layer. If you wish, press with a back of a fork for a pretty riffled surface. Cut into portions, squares or diamonds. Press a walnut halve into the center of each portion.

Bake: Bake until the top firms up and toasts nicely (about 40 min). You don’t want to make it too crisp as the hard pastry will not absorb the syrup properly. Once you take nevzine out of the oven, pour the cooled down syrup over making sure it is evenly distributed. Set aside.
